Locust bean gum, of natural origin, is obtained by pressing the seeds of the carob tree (Ceratonia siliqua). It is a tree species native to the Mediterranean area. Natural gum with thickening and stabilizing properties, used mainly as a stabilizer in pastries, cookies, special breads, jams, cream, sauces, ice cream, etc. It can be dissolved cold or hot, and its recommended dose is from 0.5 g to 5 g depending on the result you want to obtain.
